The different kimchi recipes

 

Kimchi is made from fermented cabbage with chili powder and other spices, it can be made from other vegetables such as radish, cucumber or sesame leaves. Extremely varied, there are more than 300 recipes .

Quintessential traditional dish , every family has its own secret recipe. The ingredients that are often used when making kimchi are ginger, garlic, spring onion, oysters… and as many ingredients that can be found in personal Korean family recipes. There are also many fish dishes as fish is a staple food for Koreans.

Ingredients
For 3 people

• Big Chinese cabbage
• 160 g of rock salt
• 1/2 a teaspoon of cayenne pepper
• 5 cm of grated fresh ginger
• 3 tablespoons of spices
• 5 chopped spring onions
• 2 finely chopped garlic cloves
• 1 tablespoon of caster sugar
• 2.5 cups of water

Recipe

1 – Cut the cabbage into two, then into big chunks.
2 -Put a layer of cabbage into a big bowl and sprinkle with salt.
3 – Continue this by alternating the layers of cabbage and salt, and finish with a layer of salt.
4 – Cover the cabbage with a plate as snug fitting as possible.
5 – Keep in place with something heavy, e.g a tin can, and put in refrigerator for five days.

 

6 – Remove the weight and the place and drain the liquid.
7 – Rinse the cabbage well under cold water.
8 – Press the cabbage to extract the water. 9 – Put it back in the bowl and add the cayenne pepper, the ginger, the spices, the spring onion, the garlic and the sugar.
10 – Mix well before letting it marinate in a big sterilised jar. Cover with water and seal with an appropriate lid.
11 – Put in the refrigerator for 3 to 4 days before using.
